Yeast starter

A yeast starter is a small amount of must to which yeast has been added (possibly with extra yeast nutrition). A yeast starter is usually made about half an hour before it is being added to the must in the fermentation tank. In this time the yeast is activated, and is already proliferating. By adding the yeast starter, the fermentation process starts quickly, minimizing the chance of volatile acids and spoilage.
