Verjus (or in English ‘Verjuice’) is grape juice made from unripe green grapes. The term comes from the French ‘vert jus’ which translates to ‘green juice’. It is a by-product of viticulture, for during the growing season still unripe bunches are cut away to reduce yield and improve the quality of the remaining bunches. Verjus serves in gourmet dishes in particular as an aromatic and slightly milder substitute for lemon juice or (wine) vinegar.
