German ‘Prädikatswein’ is classified on the basis of the ripeness of the grape and must weight. In ascending order of must weight the predicates are: Kabinett, Spätlese, Auslese, Beerenauslese, Trockenbeerenauslese and Eiswein. Depending on the grape variety and the German wine region, Trockenbeerenauslese (TBA) wines require a minimum must weight of 150 to 154 degrees Oechsle . TBA wines are made from selected grapes that are affected by noble rot. The botrytis cinerea fungus has dehydrated these grapes so that aromas, sugars and acids are concentrated resulting in full bodied, concentrated dessert wines.
