Pupitre is the French name for a wooden rack (trestle) with holes in which bottles can be placed upside down. A pupitre is used for the remuage during the Méthode traditionnelle. The bottles are inserted with their necks through the opening and are manually rotated during the remuage and placed more inclined in the pupitre. The mechanical version of the pupitre is the gyropalette, in which a complete box of 504 bottles is rotated in its entirety automatically.
