Press wine

Press wine is the wine made from the pressed juice fraction of white grapes, or the wine that is collected when pressing the blue grapes after fermentation. Press wine contains more phenols and therefore has more flavor, aroma, tannins and color than free-run wine (red wine) and free-run juice (white wine).  Press wine is often used to add more backbone to a blend or cuvee.
