Pectinase

Pectinase is an enzyme that breaks down pectin (a polysaccharide and part of plant cell walls). Pectinase is used during vinification to break down the cell walls of the grapes, resulting in a higher juice yield. Pectinase has the enzyme commission number (EC number) 3.2.1.15. and is also called polygalacturonase.
