Brix

Brix is a measure of the density (the sugar content) of the must. The sugar content of the liquid can be determined by measuring the refractive index of the liquid with a refractometer. The angle that the light makes at its refraction at the edge of the liquid is expressed in degrees Brix (° Bx). Baumé and Oechsle are comparable scales to show the sugar content of the must.
