Acidification

Acidification is the process of adding acid (tartaric acid or citric acid) to the wine to get a better balance between acidity, sweetness and bitterness of the wine. In Northern regions (in Europe) acidification of the wine is only allowed (after approval) in warm years. In addition, acidification in combination with adding sugar to the must (chaptalisation) is not allowed.
